This vibrant, copycat favorite layers crisp greens and roasted autumn produce with a bright maple balsamic dressing for the ultimate nourishing seasonal bowl. It preps brilliantly ahead of time and brings fresh, crisp flavor right to your lunch or dinner table.

Ingredients Needed:

Salad

sweet potato, cubed or sliced (1 small)

chopped kale, or mixed greens (4 cups)

cooked wild rice, brown rice or quinoa (1 cup)

apple, diced (1)

goat cheese, crumbled (or shaved cheddar or manchego) (1/4 cup)

chopped almonds or walnuts (1/4 cup)

roasted chicken (1 lb about 4 ounces per person)

Maple balsamic dressing

balsamic vinegar (2 tablespoons)

dijon mustard (1 teaspoon)

pure maple syrup or honey (1 teaspoon)

unrefined cold-pressed extra-virgin olive oil (1/4 cup)

Pantry staples: salt, pepper, olive oil

Tips:

Dice the apple last so it doesn't brown

Massage the kale for a minute with a little olive oil

Use precooked Costco chicken packs or rotisserie chicken

Keep components in separate airtight containers up to three to four days and the dressing keeps about a week, then assemble the day you eat it and pack the dressing on the side

Use quinoa instead of wild rice for a faster, softer, and less chewy texture in the same amount
