Sausage and Potato Casserole

Ingredients Needed:

yukon gold potatoes, peeled and cut into 1/4-inch slices (3 lbs)

unsalted butter, melted (1/4 cup)

bulk hot pork sausage (1 lb)

yellow onion, chopped (1)

freshly shredded cheese cheddar, Gruyere, Swiss or a mixture (2 cups)

fresh parsley, chopped for garnish (2 tablespoons)

Pantry staples: salt, pepper, olive oil

Tips:

Make Ahead and Freezing - Wrap tightly in two layers of plastic wrap and one layer of aluminum foil to freeze for up to 3 months. Thaw overnight in the refrigerator before reheating.

Storage and Reheating - Keep leftovers in an airtight container in the refrigerator for up to 4 days and reheat individual portions in the microwave.
