Ingredients Needed:
old fashioned rolled oats, (gluten free if necessary) (2 cups)
unsweetened coconut flakes (1 cup)
hulled raw hemp seeds, (can substitute chia seeds, hulled sunflower seeds, flax seeds or pumpkin seeds) (1 cup)
oat flour, (gluten free if necessary) (1/2 cup)
smooth peanut butter (1 1/2 cups)
honey (1/2 cup)
pure vanilla extract or your favorite flavoring, we really like McCormick brand butter flavoring (1 teaspoon)
miniature chocolate chips (4 ounces)
Tips:
Store prepared protein balls in an airtight container and they'll last about a week at room temperature. Refrigerate for another week after that, or for 2 week total.
For longer storage, you can freeze them for about three months. Let defrost in the refrigerator or on the counter until soft enough to bite.
