Simple Fried Tuna Patties

Ingredients Needed:

cans chunk light tuna in water - drained (3)

large egg (1)

small yellow onion - finely chopped (1/2)

fresh Italian parsley - finely chopped (2 tablespoons)

mayonnaise (1)

sriracha sauce (1 teaspoon)

small lemon - zested and juiced (1/2)

dry bread crumbs (2/3 cup)

Optional:

romaine lettuce

lemon (1)

lemon zest from lemon

parmesan cheese

Pantry staples: salt, pepper

Tips:

Serve these over a bed of crisp, chopped romaine lettuce tossed with fresh lemon zest, lemon juice, and shredded parmesan.

No breadcrumbs on hand? Saltine crackers make an excellent, crunchy substitute.
