The Best Pot Roast
January is the busiest month of the year a time for new routines, cold evenings, and high ambitions. You need a meal that works as hard as you do. This is arguably the best "leftover" meal in existence. The flavors actually intensify by day two, making it an excellent choice for a grab-and-go lunch.

Ingredients Needed:
Beef shoulder or boneless chuck roast (3.5 lbs)
Yellow onions (2 large)
Garlic (4 cloves)
Carrots (1 lb)
Red wine (1/2 cup)
Italian seasoning
Bay leaf (1)
Pantry staples: salt, pepper, extra virgin olive oil
Tips:
When using a slow cooker, brown the meat and the onions, and transfer to the slow cooker. Follow the recipe as written, cooking on high for 4 to 5 hours or on low for 8 to 9 hours.
