Spiced Veggie and Meatball Sheet Pan with Yogurt Sauce
These Sheet Pan Mediterranean Meatballs for the second week of February because they deliver a fast, spice forward protein boost balanced by a cooling yogurt sauce, making it the most versatile, low effort meal prep.

Ingredients Needed:
Ground turkey (1lb )
Diced sweet potatoes (3 cups)
Chickpeas (1 (15oz) can)
Plain Greek yogurt (1 cup)
Lemon (1 for 1.5 tbsp juice)
Cilantro (1/4 cup chopped)
Chili powder (1 1/2 tsp)
Cumin (1 1/2 tsp)
Smoked paprika (1 tsp)
Pantry staples: salt, pepper, garlic powder, olive oil
Tips:
To prep ahead, refrigerate the meatballs and veggies and the yogurt sauce in separate sealed containers. Store the meatballs and veggies for up to 4 and the sauce up to 7 days.
