One Pot Caramelized Shallot & Thyme Pasta

This one-pot pasta transforms simple caramelized shallots into a deeply creamy, soul warming meal that’s perfect for those freezing January nights when you need the ultimate hit of comfort without the cleanup. This meal is almost better reheated or the second day allowing the sauce to thicken up even more.

Ingredients Needed:

ground pork (1/2 lb)

shallots (5)

garlic (6 cloves needed)

dried thyme (2 tsp)

fusilli or rigatoni pasta (16 oz, gluten-free or regular)

chicken broth (32 oz)

full-fat coconut milk (13.5 oz can, 3/4 cup needed)

Pantry staples: salt, pepper, olive oil

Tips:

Great meal when you reheat it the next day.

Stir this every 7-10 min while it cooks so the pasta doesnt get hard on top.

Don't be afraid to use more pork a whole pound of pork in this comes out great.
